How to set max rounds in CS:S

Type mp_maxrounds 30 in the server console and the map changes after 30 rounds. 0 turns the round limit off.

mp_maxrounds

Sets the maximum number of rounds played on a map before it changes.

mp_maxrounds <rounds>

mp_maxrounds 30

Classic 30 round format.

mp_maxrounds 0

No round limit.

Arguments

roundsRequired
Number of rounds per map. 0 means no limit.

What it does

Once this many rounds have been played, the map ends and the server loads the next map. Use it for round based matches instead of a time limit. 0 turns the round limit off.

Run it on your server
