How to limit player interp ratio in TF2

Type sv_client_min_interp_ratio 1 in the server console so players cannot use a cl_interp_ratio below 1. -1 allows any value.

sv_client_min_interp_ratio

Sets the lowest cl_interp_ratio players may use while connected. -1 lets them use any value.

sv_client_min_interp_ratio <value>

Require at least ratio 1.

What it does

Keeps players from running interpolation settings that are too low for the update rate. Competitive configs adjust this together with sv_client_max_interp_ratio.

The game's own description: This can be used to limit the value of cl_interp_ratio for connected clients (only while they are connected). -1 = let clients set cl_interp_ratio to anything any other value = set minimum value for cl_interp_ratio

Run it on your server
