How to drop your knife in CS2
Type mp_drop_knife_enable 1 in the server console, then players can drop their knife with the drop key.

What it does
Normally the knife cannot be dropped. With it on, players can drop knives with the drop key, for example to show a skin to a teammate.

On a SLASHPLAY server, type it in the Console tab of the server page; the reply shows right under it. A value set there lasts until the server restarts. To keep it, add the line to game/csgo/cfg/server.cfg. New to this? Start a CS2 server first.
